Okra in spice sauce

Serves 4 to 5 people

 

Ingredients

2 tbsp dried shrimp

3 fresh red chillies, seeded and chopped

4 cloves garlic, chopped

1½ tsp shrimp paste

3 shallots, chopped

3 tbsp vegetable oil

2.25g fresh okra, trimmed

1 tbsp lime juice

freshly ground black pepper

 

Method

1. Soak dried shrimp in hot water for 10minutes. Drain and put in a blender. Add chillies, garlic, shrimp paste and shallots. Mix to a paste, adding water if necessary.

2. In a wok or frying pan, heat oil over medium-high heat. Add okra and stir fry for about 5 minutes. Remove with a slotted spoon and set aside.

3. Add spice paste to pan and stir-fry for 1 minute. Lower heat and return okra to pan with lime juice, 4 tbsp water and plenty of black pepper. Bring to a simmer then cook gently, stirring occasionally, for 5 minutes or until okra is tender.
