Salmon Oshi Sushi

Ingredients

120g salmon (sake)

10g tomato, white onion

10g green pepper

300g sushi rice

½ piece seaweed sheet

1 tbsp meat floss

 

Seasoning

1 tsp sugar

½ tsp black pepper

½ cup each of soy bean paste, rice wine

½ cup sweet rice wine (mirin)

 

Method

1. Rinse Salmon and marinate with seasoning for 2 hours. Remove and roast in oven. Shred after it cooks.

2. Rinse tomato, onion, green peppers and shred. Soak in cold water until soft, remove and drain.

3. Line a cling wrap on the base of sushi mould attach frame, spread sushi rice and flatten with cover. Place seaweed sheet over and sprinkle the rest of the ingredients. Press evenly with cover, remove sushi mould and cling wrap. Cut and serve.
