Thai grilled chicken

Ingredients

5 pieces of drumstick or breast chicken meat

1 tsp whole black peppercons

½ tsp cumin seeds

4 tsp sugar

2 tsp paprika

1 piece of fresh ginger

3 cloves garlic

15g coriander leaves chopped finely

3 tsp vegetable oil

salt

a few pieces of lettuce leaves

½ cucumber cut into pieces

4 spring onions

2 limes

 

Method

1. Grind the peppercorns, cumin seeds and sugar in a pestle and mortar. Add paprika, ginger, garlic, coriander and oil and grind.

2. Spread the marinade over the chicken drumstick or breast and chill for 6 hours. Cook the chicken under a moderate grill for 20minutes. Turn the chicken a few times to ensure it gets grilled thoroughly.

3. Arrange the chicken nicely on the lettuce and is ready to serve.
