Salmon with creamy lemon sauce

Serves 4 to 6

Ingredients

700g salmon fillet

1 tbsp extra virgin oil

1 clove garlic, finely chopped

4 tbsp lemon juice

2 tbsp capers

1 tsp lemon pepper seasoning

120ml fat free natural yogurt

 

Method

1. Preheat the oven to 180C. Coat a baking sheet with cooking spray

2. Place the salmon on the baking sheet and cook for 20minutes, or until the fish is just opaque.

3. Meanwhile heat the oil in small saucepan over medium heat. Add the garlic and cook for 1 minute. Reduce the heat to low. Stir in the lemon juice, capers and lemon pepper seasong and cook for 5minutes. Add the yogurt and gently heat through; do not boil. Serve with the fish.
