Asparagus and Orange Salad

Serves 4 to 6 people

 

Ingredients

225g asparagus, trimmed and cut into 5cm

2 large oranges

2 well-flavoured ripe tomatoes, cut into eighths

50g romaine lettuce leaves, shredded

30ml extra virgin oil

2.5ml sherry vinegar

salt and ground black pepper

 

Method

1. Cook the asparagus in lightly salted, boiling water for 3-4 minutes, until just tender. Drain and refresh under cold water. Set aside.

2. Grate the rind from half and orange and reserve. Peel both oranges and cut into segments, leaving the membrane.

3. Put the asparagus pieces, segments of orange, tomatoes and lettuce into a salad bowl. Mix together the olive oil and sherry vinegar and add 15ml of the reserved orange juice and 5ml of the grated orange rind, whisking well to combine. Season with a little salt and plenty of ground black pepper. Just before serving, pour the dressingover the salad and mix gently to coat.
